Light pastry tart with crisp vegetables and Epoisses cheese

Ingredients
- 1 sheet flaky pastry
- 2 courgettes
- 1 sweet red pepper
- 1 sweet green pepper
- 1 sweet yellow pepper
- 1 red onion
- 80g of Germain Epoisses cheese
- A few sprigs of thyme
- 3 tbs olive oil
- salt and pepper from a mill

Preheat your oven to 200°.

Cut the peppers and courgettes into large pieces and place them in a baking dish. Pour over the olive oil and add the salt and pepper. Bake for 25 mins, stirring from time to time.

Lower the oven temperature to 180°.

Place the flaky pastry in a tart plate or dish and arrange the vegetables on top. Add a little thyme and finely sliced red onion.

Bake for 25 minutes then remove the tart from the oven and place slices of Epoisses cheese on top of the vegetables. Put back into the oven for 3 to 5 minutes.

Serve with baby salad leaves.
